Ingredients

green lentils
1
tablespoon
coconut oil
1
medium yellow onion
peeled and diced

large garlic gloves
peeled and diced
1-2
jalapeƱos
seeds removed and diced (keep the seeds if you like it spicy)

poblano peppers
seeds removed and diced

tablespoon
cumin
ground

tablespoon
coriander
ground

chili powder

vegetable or chicken broth

Instructions
In a large bowl cover the lentils with water and soak overnight.
Drain and rinse the lentils.
In a large
stock pot
, heat the coconut oil over medium heat.
Add the onion, garlic, jalapeno, and peppers.
Cook the vegetables until slightly soft and the onions are translucent.
Add the spices, lentils, and broth.
Reduce the heat to low, cover, and cook until the lentils are tender about 1-2 hours (more or less as needed).
