In a food processor, add the nuts and pulse a few times to break them up.

Add the maca, cinnamon, vanilla, and salt, and pulse a couple more times until combined.

While the processor is running, add the dates one at a time until the mixture comes together into a dough.

If the dough seems too dry, add water 1 tablespoon at a time until firm but not sticky.

Add 1/4 cup chocolate chips and pulse to slightly mix them into the dough.

In a 8x8 baking pan lined with parchment paper, scrape out the dough into the pan.

Press the mixture evenly into the bottom of the pan.

Sprinkle the remaining 1/4 cup chocolate chips on top of the blondies and press down with your fingers to get them to stick.

Let sit in the fridge for about 30 minutes.

Cut into squares.

Store in an airtight container for up to one week.
