Ingredients

  • 1 large sweet potato cut into 3/4 inch pieces (about 3 cups)
  • 2 cored apples cut into 3/4 inch pieces (I used Gala)
  • 1 medium red onion peeled and cut into 3/4 inch pieces
  • 2 tablespoons coconut oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon fresh or dry thyme
  • 1/2 teaspoon allspice
  • 1 pound chicken thighs

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Mix the spices together in a small bowl.
  3. Coat the potato, apple, and onion in coconut oil.
  4. Sprinkle half of the seasoning mixture onto the vegetables and mix to coat.
  5. Spread the vegetables and apple mixture into a single layer on a lined 13x18 inch sheet pan.
  6. Season both sides of the chicken with the other half of the seasoning mix.
  7. Place the chicken on top of the vegetables.
  8. Roast in the oven for 25-30 minutes until sweet potatoes are tender and chicken is cooked through.
  9. Serve immediately.
