Ingredients
Curry Dressing

plain coconut yogurt

curry powder

rice wine vinegar

salt
Water as needed
Salad

head romaine lettuce
chopped
2
ribs celery
chopped
1/2
cup
cucumber
cubed
1/4
cup
red onion
peeled and sliced thin
1/4
cup
cilantro
minced
2
tablespoons
peanuts
or
raw cashews
2
tablespoons
raisins
or 1/4 cup red grapes halved
1
cup
rice
cooked
Instructions
In a small bowl mix the dressing ingredients together adding water if too thick.
Assemble the salad together using the rest of the ingredients.
Top with the dressing right before serving.
Serves 2 for entrees or 4 as a side.
