Ingredients

  • 1 fennel bulb cut in half and then sliced thin
  • 1 medium cucumber cut in half then sliced
  • 1/4 cup yellow or red onion peeled and diced
  • 1/2 cup cilantro roughly chopped
  • 2 avocados cubed
  • Dressing:
  • 2 Tbsp lime juice
  • 1 Tbsp honey
  • 1/2 Tbsp Dijon mustard
  • 4 Tbsp olive oil
  • 2 pinches salt
  • 1 pinch black pepper

Instructions

  1. Mix all of the dressing ingredients into a jar and shake to combined.
  2. Toss all of the salad ingredients together.
  3. Pour dressing over the top and mix until all of the vegetables are coated.
  4. Serve.
