Ingredients

fennel bulb
cut in half and then sliced thin
1
medium cucumber
cut in half then sliced
1/4
cup
yellow or red onion
peeled and diced
1/2
cup
cilantro
roughly chopped
2
avocados
cubed
Dressing:
2
Tbsp
lime juice
1
Tbsp
honey
1/2
Tbsp
Dijon mustard
4
Tbsp
olive oil
2
pinches
salt
1
pinch
black pepper
Instructions
Mix all of the dressing ingredients into a jar and shake to combined.
Toss all of the salad ingredients together.
Pour dressing over the top and mix until all of the vegetables are coated.
Serve.
