Preheat oven to 375 degrees

On 2 lined baking sheets...first one add sweet potatoes and coat with 1 tsp coconut oil cook until tender about 20 min.

On the second sheet add peppers and onion, coat with 1 tsp coconut oil. Cook until tender about 15 min.

While veggies are cooking make the dressing in a large bowl adding all of the seasoning and mix in the olive oil.

To the dressing add cooked vegetables, black beans, and cilantro.

Mix to coat.

Serve warm, room temp, or cold.
