Drain and rinse the millet.

Add millet to a small sauce pan and cover with water.

Cook over medium heat until all of the water is absorbed, about 15 min.

Add the millet to a large bowl.

In a small jar or bowl add the vinegar, mustard, salt, pepper, oregano, oil and shake or mix with a whisk.

Add the dressing over the millet and mix to coat.

Add the rest of the ingredients and mix well.

Keeps covered in the fridge for up to one week.
