Ingredients

  • 1 cup millet soaked in water overnight
  • 1/4 cup apple cider vinegar
  • 1 Tbsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano
  • 1/4 cup olive oil
  • 1/2 cup parsley chopped
  • 1/4 cup kalamata olives pitted and cut in half
  • 1/4 cup capers drained (optional)
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion diced

Instructions

  1. Drain and rinse the millet.
  2. Add millet to a small sauce pan and cover with water.
  3. Cook over medium heat until all of the water is absorbed, about 15 min.
  4. Add the millet to a large bowl.
  5. In a small jar or bowl add the vinegar, mustard, salt, pepper, oregano, oil and shake or mix with a whisk.
  6. Add the dressing over the millet and mix to coat.
  7. Add the rest of the ingredients and mix well.
  8. Keeps covered in the fridge for up to one week.
