Beet Sliders: Two Ways

Ingredients

  • 4 large beets greens removed
  • 2 large carrots greens removed and cut in 1 inch pieces
  • 2 stalks celery cut in 1 inch pieces
  • 1 large onion cut in 1/4
  • water to cover
  • 2 medium tomatoes sliced in 1/4 inch slices
  • 1-2 heads Boston lettuce
  • 1 red onion peeled and sliced thin pickled in 2 tablespoons apple cider vinegar for 10 minutes
  • 0-8 mini slider buns
  • 1 pound grass fed organic ground beef optional
  • Tahini Green Goddess Dressing 2 batches

Instructions

  1. In a medium stock pot (or in your crock pot) add the beets, carrots, celery, onion and cover with water.
  2. Over medium high heat bring the water to a boil.
  3. Reduce the heat to low, cover, and simmer for 2 hours or until beets are soft. Crock pot may take 4-6 hours.
  4. Remove the beets with a large spoon and allow to cool on a plate until you can handle them with your hands. Keep the beet stock and use in soups, stews, or just drink.
  5. When the beets are cooled, peel the skin off with your fingers (should come off very easily).
  6. Slice each beet into 4 slices.
  7. If making the beef sliders, season the beef with salt and pepper, roll into 2 ounce patties and grill or cook in saute pan on the stove or about 5 minutes per side.
  8. Build your sliders as desired.
  9. Bun or lettuce, lettuce, tomato, green goddess dressing, pickled onions, beef patty, and beet slice.
