Coconut Vanilla Popsicles

Ingredients

  • 2 cans full fat coconut milk I like this brand for the BPA free can
  • 1/4 cup unsweetened shredded coconut flakes
  • 1 tablespoon pure maple syrup or raw honey
  • 1 teaspoon vanilla powder or extract

Instructions

  1. In a blender add one can of the coconut milk and scrap the coconut cream off of the second can (reserve the coconut water for smoothies).
  2. Note: the coconut cream and coconut water is always separate in the brand of coconut milk I use. You may need to put the cans in the fridge overnight to get them to separate. I can usually tell if I shake the can and is doesn't make a sound of liquid shaking.
  3. Add all of the rest of the ingredients and blend until smooth.
  4. In a popsicle mold or use ice cube trays or paper cups pour in the mixture.
  5. Add sticks as needed.
  6. Allow to freeze overnight.
