Secretly Healthy Peanut Butter Pie

Ingredients

  • 1/2 cup hazelnuts any nut will work
  • 6-8 large pitted dates
  • 1 cup cooked garbanzo beans
  • 1/4 cup smooth peanut butter look for brand made with peanuts and salt at the most
  • 1 tablespoon pure maple syrup or raw honey
  • 1/4 cup water
  • 1/4 cup chocolate chips
  • 2 tablespoons almond milk
  • peanuts to garnish optional

Instructions

  1. Add the nuts to a food processor and process until well chopped. With the machine running add the dates, one at a time until you have reached desired consistency. The mix should hold together when you press between your fingers.
  2. Divide the dough into two small tart ramekins. *line with plastic or parchment if you want to easily get them out.
  3. Press the dough evenly into the bottom and up the sides.
  4. In the same food processor add the beans, peanut butter, and sweetener.
  5. With the processor running drizzle in the water until smooth and creaming. I like to let it run for 3-5 minutes for an extra smooth texture.
  6. Divide the mixture into the two ramekins and spread out evenly.
  7. Let the pie sit in the fridge to set.
  8. Make the chocolate sauce by melting the chocolate and milk in a bowl over boiling water.
  9. Once melted cover the tops of the pies with the chocolate sauce.
  10. Sprinkle with chopped peanuts as desired.
  11. Let sit up in the fridge for at least 4 hours or overnight.
  12. Serves 4.
