1pintcherry tomatoesor cut large tomatoes into cubes
1garlic clovepeeled and diced
2tablespoonsred wine vinegar
1/2teaspoonsalt
pinchblack pepper
handful of parsley or basil1/2 teaspoon dried Italian seasoning works too
1/4cupolive oil
Instructions
Add cherry tomatoes to a lined baking sheet and roast under the broiler until the juices start to burst (about 20 minutes but keep an eye out as not to burn).
Add the roasted tomatoes and the rest of the ingredients to a blender and blend until smooth.
