Roasted Tomato Vinaigrette

Ingredients

  • 1 pint cherry tomatoes or cut large tomatoes into cubes
  • 1 garlic clove peeled and diced
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • pinch black pepper
  • handful of parsley or basil 1/2 teaspoon dried Italian seasoning works too
  • 1/4 cup olive oil

Instructions

  1. Add cherry tomatoes to a lined baking sheet and roast under the broiler until the juices start to burst (about 20 minutes but keep an eye out as not to burn).
  2. Add the roasted tomatoes and the rest of the ingredients to a blender and blend until smooth.
  3. Store in an airtight container for 3-5 days.
