Ingredients

  • 2 2/3 cups whole grain flour I used spelt
  • 1/3 cup raw cacao powder or unsweetened cocoa powder
  • 1/2 cup coconut sugar
  • 1 Tbsp baking powder aluminum free prefered
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 cup cold butter cut into pieces (organic pastured prefered)
  • 1 tsp vanilla extract
  • 1 large egg organic pastured prefered
  • 3/4 cup coconut milk or whole milk
  • 3/4 cup strawberry jam

Instructions

  1. Preheat oven to 375 degrees.
  2. Shift together the flour, cocao powder, baking powder and baking soda.
  3. Add the coconut sugar and salt.
  4. With a fork or pastry blender mix the butter into the dry ingredients until crumbly.
  5. In a seperate bowl mix the vanilla, eggs, and milk.
  6. Add the liquid ingredients to the dry mix.
  7. Stir until combined being careful not to overmix.
  8. Add 1-3 more Tbsp milk if needed to combined.
  9. On a floured surface roll the dough out to 3/4 in thickness.
  10. Cut with a cookie cutter or with a pizza roller into wedges.
  11. Place the scones on a lined cookie sheet.
  12. Bake for 18-20 minutes until cooked threw.
  13. Halfway threw cooking I put an indentation from the back of a Tbsp on each scone for my filling (optional).
  14. Remove from oven and top with strawberry jam as desired.
