Ingredients

  • 12 ounces fresh green beans blanched in boiling water for 5 minutes
  • 1 zucchini cubed
  • 2 cups fresh spinach
  • 1 handful of fresh parsley about 1/4 cup
  • 8-10 fresh basil leaves
  • 1/2 teaspoon dried thyme
  • 1 avocado pitted and skin removed
  • 2 green onions chopped
  • 1 garlic clove peeled and chopped
  • 1/2 cup fresh lemon juice 2-4 lemons
  • 1 teaspoon salt
  • 1/2 cup water or almond milk as needed
  • Optional toppings:
  • Chopped cucumber zucchini, tomatoes, or snap peas
  • Torn herbs
  • Chopped nuts
  • Drizzled with oil

Instructions

  1. Add all of the ingredients (except the water) to a blender.
  2. Blend until smooth and creamy adding the water a little at a time until desired consistency is reached.
  3. Top with desired toppings and serve room temperature or cold from the refrigerator.
