1can sustainable canned tunadrained (canned salmon, sardines, or mashed chickpeas would work too)
2tablespoonsolive oilor use from the tuna if packed in oil
juice from 1/2 lemonabout 1 tablespoon
pinchsalt and pepper
1head romaine lettucewashed and chopped (any greens would work)
1cupchopped cabbage
1green onionchopped
1/2large cucumbersliced or chopped
1/4cupjungle peanuts or raw peanuts
2teaspoonssesame seeds
Peanut Dressing
1/4cuppeanut butteruse almond butter or sunflower butter too
1tablespoonred wine vinegar
1tablespoontamari
2tablespoonslime juice
1tablespoonolive oil
1teaspoontoasted sesame oil
1small clove garlicpeeled
1/2teaspoondijon mustard
2tablespoonswater
Instructions
In a small bowl mix the tuna, oil, lemon juice, salt and pepper.
Set aside.
In two salad bowls divide the lettuce, cabbage, onion, cucumber, peanuts, and sesame seeds.
To make the dressing add all of the ingredients to a blender and blend until smooth and creamy. Add more water as needed to get your desired consistency.
Top each salad with 1/2 the tuna and drizzle with salad dressing.
