Cucumber Mint Slushy

If you are a fan of cucumber flavored water then you are going to especially love this slushy.  I have been making a lot of refreshing drinks in my juicer lately.  The juicer is not just for traditional vegetable juices.  You can make so many delicious beverages with your juicer.  I am definitely getting my money’s worth from that purchase.

I love juicing cucumbers because they have so many health benefits.  About 96% of cucumbers are water, which is pretty impressive.  Cucumbers are an excellent source of vitamin C and A, folate, and potassium (just to name a few).  This vegetable also supplies necessary electrolytes and restores hydration to your bodies cells which helps prevent water retention.

What better time of year to get more hydration then in the summer.  I find myself so much more thirsty in the summer.  I know that especially here in Arizona when it is over 100 degrees I take water with me everywhere.

This slushy recipe was inspired by an amazing juice bar that we went to in Kauai.  The second I had a sip I knew that I had to make it at home for myself.  Even my husband loved it and told me that if I make it for him he would drink it all the time.  I knew I had a winner on my hands.  I hope that you enjoy this slushy as much as we do!

Ingredients

  • 1 large cucumber
  • 5 sprigs of mint
  • 1 cup pineapple peeled
  • 1 lime peeled
  • 2 cups ice

Instructions

  1. In a juicer, juice the cucumber, mint, pineapple, and lime (makes about 2 cups).
  2. If you don't have a juicer: add the ingredients to a blender and blend well. Then strain the mixture in a cheesecloth to get the juice out.
  3. In a blender add the cucumber juice and ice.
  4. Blend until ice is crushed.
