Tips For Packing a Healthy Lunch + A Giveaway

I have been using this new double decker box for a couple weeks now and I love it!  I put salad greens in one compartment and my toppings in the other and my lettuce stays nice and crisp.  I hear it all the time from readers.  They don’t feel like they have enough time to plan meals or cook in order to take healthy choices with them on the go.  Why not get 5 of these lunchboxes, make all of your meals on Sunday night and have them ready to go for the whole week.  One and done.  **See at the end of this post for some additional healthy lunch recipes.  When it comes to prepping your lunches for the week here are some things I like to do on the weekend.

1.  Cut and Roast a ton of vegetables.  Pick your favorites and enjoy what is in season.  In the summer do zucchini and yellow squash or in the winter do butternut squash or pumpkin.  I also love to roast eggplant, sweet potatoes, onions, peppers, and tomatoes.  Just bake at 400 degrees in a little coconut oil until tender.  You can add these roasted vegetables to salads or add them to something like pasta or spaghetti squash.

2.  Wash and pre-cut your lettuce.  Salad are really one of my go to lunches because they make it so easy to increase that daily intake of fiber and nutrients.  I buy a lot of different types of greens from spring mix to kale and even collard greens.  Do this task once, instead of every morning before running out the door.

3.  Soak and cook some grains like quinoa, millet, barley, or wheat berries.  I soak my grains on Saturday night and cook them on Sunday.  These are great to add to greens or use in other salad recipes like my Quinoa and Roasted Butternut Squash or Toasted Barley with Curry Vinaigrette

4.  Make a nice salad dressing or two.  I am a huge fan of making my own salad dressing.  I never buy the stuff.  What better way to make salad more enjoyable then with a tasty salad dressing.  Make one to last the whole week or make a couple to switch it up.  Some of my favorites are my Raspberry Vinaigrette , Creamy Oriental Dressing, and Parsley Vinaigrette

5.  Utilize your freezer.  When you are cooking meals for the week make extra and freeze the leftovers.  Better yet, freeze them in individual portions so you can take then as you need them.  Soups and stews freeze well.  Check out my Sweet Potato, Kale, and Corn Chowder or my Black Bean and Butternut Squash Chili
