Beet Sliders: Two Ways
As a dietitian I believe that one diet does not fit all. Not everyone’s body can tolerate all of the same foods. One person may tolerate grains well but then someone else may not. One person may tolerate dairy well but then someone else may not. You get the idea! The one thing that I do believe is that vegetables are an important piece of any healthy diet. The fiber, antioxidants, and nutrients that vegetables provide can not be found in any pill.
If you are a vegan, if you need to avoid gluten, or if you are living the paleo lifestyle chances are not everyone around you is following the same meal plan. These beet sliders may just be the perfect meal that will help family and friends of all food lifestyles come together. Instead of making 3 different dishes to accommodate everyone, you can easily fit these sliders into just about any diet. My favorite part about these are that they still include loads of healthy veggies!
These little beet beauties can be made in so many different ways. At a party put out all of the ingredients and let all your guests build their own. Vegan, vegetarian, or keeping it light? Skip the beef patty. Avoiding grains or gluten? Use a lettuce leaf instead of a bun. Keep the variety going by making mini veggie burger patties, turkey patties, or chicken patties. Some tangy goat cheese perhaps.
Beets are the star of this show as they are a natural detoxifier and can help cleanse your blood. Just look at the deep color of beets and you can see they contain powerful nutrients. Nutrients that just may lower blood pressure, fight inflammation, aid against cancer, and boost stamina.
Are those good enough reasons to eat more beets? I’d say yes!
Beet Sliders: Two Ways
Ingredients
- 4 large beets greens removed
- 2 large carrots greens removed and cut in 1 inch pieces
- 2 stalks celery cut in 1 inch pieces
- 1 large onion cut in 1/4
- water to cover
- 2 medium tomatoes sliced in 1/4 inch slices
- 1-2 heads Boston lettuce
- 1 red onion peeled and sliced thin pickled in 2 tablespoons apple cider vinegar for 10 minutes
- 0-8 mini slider buns
- 1 pound grass fed organic ground beef optional
- Tahini Green Goddess Dressing 2 batches
Instructions

In a medium stock pot (or in your crock pot) add the beets, carrots, celery, onion and cover with water.

Over medium high heat bring the water to a boil.

Reduce the heat to low, cover, and simmer for 2 hours or until beets are soft. Crock pot may take 4-6 hours.

Remove the beets with a large spoon and allow to cool on a plate until you can handle them with your hands. Keep the beet stock and use in soups, stews, or just drink.

When the beets are cooled, peel the skin off with your fingers (should come off very easily).

Slice each beet into 4 slices.

If making the beef sliders, season the beef with salt and pepper, roll into 2 ounce patties and grill or cook in saute pan on the stove or about 5 minutes per side.

Build your sliders as desired.

Bun or lettuce, lettuce, tomato, green goddess dressing, pickled onions, beef patty, and beet slice.
