Move Over Ice Cream Truck: 4 Ingredient Coconut Vanilla Popsicles
The temperatures are rising outside and summer is on its way. You may be soon hearing the music from a neighborhood ice cream truck. That noise is unmistakable. As a kid I would get excited at that sound and run begging my parents for money to buy a sweet treat. The fudge bars, ice cream cones, and brightly colored popsicles. I particularly remember the ice cream popsicles that were shaped like Chip and Dale (I think on had a brown nose and one had a red nose).
I am all for treating yourself and not depriving anyone (including kids) but when you can make a healthy alternative to a highly processed food with real ingredients, then I am all for it. Thinking back to those brightly colored popsicles I may mention the link between artificial colors and hyperactivity in children. Or an ice cream sandwich when I remember seeing a video floating around the internet about the ice cream that sat out in the sun for hours and never melted. That can’t be normal right?
These coconut vanilla popsicles are a cold, creamy, and tasty treat that you could easily make with your kids. I am sharing a vanilla version as a base to let your creative juices flow. Make these popsicles into any of your favorite flavors. Add frozen or pureed fruit like strawberries, blueberries, mango, peach, or raspberries. Mix in cocoa powder for chocolate or coffee for a latte flavor. You could even add super foods like matcha or puree acai. Now if my ice cream truck served these instead I would be right along side those kids running after them to get my treat.

Coconut Vanilla Popsicles
Ingredients
- 2 cans full fat coconut milk I like this brand for the BPA free can
- 1/4 cup unsweetened shredded coconut flakes
- 1 tablespoon pure maple syrup or raw honey
- 1 teaspoon vanilla powder or extract
Instructions

In a blender add one can of the coconut milk and scrap the coconut cream off of the second can (reserve the coconut water for smoothies).

Note: the coconut cream and coconut water is always separate in the brand of coconut milk I use. You may need to put the cans in the fridge overnight to get them to separate. I can usually tell if I shake the can and is doesn't make a sound of liquid shaking.

Add all of the rest of the ingredients and blend until smooth.

In a popsicle mold or use ice cube trays or paper cups pour in the mixture.

Add sticks as needed.

Allow to freeze overnight.

They are a great tool. Ice cubes trays or simply paper cups work great too in a pinch!
What could be better than a 10 minute, 4 ingredient, delicious snack? This is great and I am sure my kids will go crazy for the blueberry ones… Any pointers on that flavor?
You could simply add fresh or frozen blueberries into the molds or blend in fresh berries. That would be amazing!
