Summer is nearing its end and while I am looking forward to fall, especially here in hot Arizona, I am going to miss all the fresh fruit in season right now.  While Labor Day weekend is dedicated to honor the contributions that workers have made to making our country what it is, in my mind it is also a celebration of the end of summer.  Cheers to the workers and to a great summer with this easy Watermelon Lime Ginger Slushy!

Summers as a kid were always my favorite.  No school, sleeping in everyday, family vacations, and time spent at our neighborhood pool.  I was a fish back then and could live at the pool.  These days summer isn’t really much different than any other day.  Work doesn’t take summers off and it is usually too hot to spend hours at the pool.  I do, however, get to create delicious recipes using the ingredients that summer has to offer.  When you think of watermelon, don’t you immediately think of summer?  What better way to enjoy a hot summer day than with a refreshing beverage!

How to Pick the Perfect Watermelon

Look at its belly, the place where the watermelon sat on the ground. It should be yellow. And there should be a ring of black crystallized sugar around the stem — a sign of good sugar content.  Have you noticed people thumping watermelon in the store?  For good reason, they are listening for a “hollow” sound.  If you feel the melon vibrate in the hand that’s holding it, that is a good sign of a crisp, solid watermelon.

How nutritious is Watermelon?

Very!  Watermelon has more lycopene than raw tomatoes.  Lycopene is the carotenoid that gives this fruit its beautiful pink color and is known as a powerful antioxidant.  You can also find some vitamin C in watermelon which is great for supporting your immune system.  Not surprisingly, a lot of water is found in watermelon, making it great for keeping hydrated.  The high water content helps keep the sugar content relatively low for a fruit.  Watermelon contains only about 9 grams in 1 cup.

Watermelon Lime Ginger Slushies would also be great frozen in popsicle molds or with a little added spirit for an adult cocktail.  Cheers!

Ingredients

  • 2 cups sweet watermelon cut off the rind
  • 1/2 teaspoon freshly grated ginger
  • Juice of 1 lime about 2 Tablespoons (my favorite citrus juicer)
  • 1/2 cup sparkling water
  • 1 cup ice cubes
  • Optional add-ins: fresh mint or splash vodka

Instructions

  1. Add all of the ingredients to a high powered blender and blend until smooth.
  2. Drink immediately.

Choose organic ingredients when possible.
