Beet Salsa
Beets are one of those vegetables that I really had not started eating until I started eating more cleanly. I think some of that has to do with shopping at more farmers markets and here in Arizona beets grow really well. Beets are everywhere here. In fact I am growing my own right now!
Beets have the highest sugar content of all vegetables so they become super sweet when roasted. So Good! Not only do beets taste amazing but they also are a nutritional powerhouse. The nutrients in beets may help lower your blood pressure, boost your stamina, fight inflammation, protect against cancer, and help purify your blood and liver. Wow!
This beet salsa is a great way to add them to your diet. Eat with tortilla chips, over a taco salad, or served on top of fish. If you are not including beets in your diet…you should be. Beets are often on health educators top 10 lists of nutritious foods and they are certainly on mine. Here is another delicious way to make beets are part of your life.
- 3 medium beets (I don’t even peel them just wash them really well with a clean brush)
- 1 Tbsp [url href=”“]coconut oil[/url]
- 1/2 red onion, diced
- 1/4 cup cilantro, diced
- 1 jalapeno, diced (remove the seeds or leave them depending on how spicy you like it)
- Juice 1-2 limes (about 2 Tbsp)
- Zest 1 lime
- 1/4 tsp salt
- Dice the beets into small cubes, about 1/4 in.
- Coat the beets in coconut oil.
- Roast the beets in a 400 degree oven for 15-20 minutes.
- Let the beets cool.
- Add the rest of the ingredents with the cooled beets and toss.
