Chocolate Scones with Strawberry Jam

One of the most important lessons about food I can share with you is that (as much as possible) it should be REAL.  I am not talking about foods bought in a box or a package but real homemade foods made with real ingredients.  Foods that our grandmothers or great grandmothers would have made.

I have a nutritionist friend that often tells her audiences that if she had the choice of a white bread made with just white flour, water, yeast, and salt or a whole grain bread with dozens of unknown ingredients she would choose the white bread every time.  That is great advise.

So many people are on the gluten free or grain free plan these days.  I am a firm believer that one diet is not for everyone.  I think it needs to be whatever works for you and what makes you feel your best, look your best, and perform at your best.  If that means avoiding gluten or grains then that is great.  That is one reason that I love to share a variety of recipes with all of you.

I personally love whole grains and like to incorporate a variety in my diet but the key is not making it the focus of your diet.  The old age food guide pyramid is wrong…grains should not be on the bottom and we do not need 6-10 servings per day.  I make the focus of my diet vegetables and have the whole grains as a side dish.  Whole grains give me energy and keep me feeling full.

That being said these scones are not gluten or grain free but feel free to use your favorite gluten free flour if you would like to do so.  Valentine’s Day is the perfect day for a little treat.  These would be great for breakfast or to send with your little one’s school lunch as a surprise.  I also imagined cutting these in half and filling them with fresh strawberries and whipped cream or bananas and melted chocolate.  YUM!

Ingredients

  • 2 2/3 cups whole grain flour I used spelt
  • 1/3 cup raw cacao powder or unsweetened cocoa powder
  • 1/2 cup coconut sugar
  • 1 Tbsp baking powder aluminum free prefered
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 cup cold butter cut into pieces (organic pastured prefered)
  • 1 tsp vanilla extract
  • 1 large egg organic pastured prefered
  • 3/4 cup coconut milk or whole milk
  • 3/4 cup strawberry jam

Instructions

  1. Preheat oven to 375 degrees.
  2. Shift together the flour, cocao powder, baking powder and baking soda.
  3. Add the coconut sugar and salt.
  4. With a fork or pastry blender mix the butter into the dry ingredients until crumbly.
  5. In a seperate bowl mix the vanilla, eggs, and milk.
  6. Add the liquid ingredients to the dry mix.
  7. Stir until combined being careful not to overmix.
  8. Add 1-3 more Tbsp milk if needed to combined.
  9. On a floured surface roll the dough out to 3/4 in thickness.
  10. Cut with a cookie cutter or with a pizza roller into wedges.
  11. Place the scones on a lined cookie sheet.
  12. Bake for 18-20 minutes until cooked threw.
  13. Halfway threw cooking I put an indentation from the back of a Tbsp on each scone for my filling (optional).
  14. Remove from oven and top with strawberry jam as desired.
