Clean Lemon Vinaigrette Recipe

Salads are a huge staple of my diet.  A big bowl loaded with nutritious leafy greens is as mouthwatering to me as a juice steak is to some.  Salads can be switched up in thousands of different ways.  People always ask me how I can eat salad everyday and I always say the same thing…I don’t eat the same salad.  Variety is not just good for boredom but it is the best way to vary nutrient intake too.  Healthy salads include a variety of colorful plants with a clean salad dressing.  If a salad consists of iceberg lettuce, shredded cheese, and a highly processed bottled dressing then it can’t be put in the healthy category.  I ALWAYS make my own dressings to avoid questionable ingredients.  Exhibit A,B, C, and D.  When I was looking to make a new vinaigrette I looked at all of the lemons I had on my counter.  Citrus fruits are in season right now so coming up with a good lemon vinaigrette was really a no brainer.  This dressing is not only made with real, healthy, and clean ingredients but there is no sugar or sweetener in it at all.

If you have not yet tried to make your own salad dressing yet then you really must try it.  They are very cost effective, the flavors are endless, and you can make sure you are using the best quality ingredients.  I haven’t tasted a store bought dressing in years but I know that my homemade versions have so much more flavor. Lemon Vinaigrette

Servings 2 cups

Ingredients

  • Zest and juice of one large lemon
  • 1/4 cup apple cider vinegar
  • 1/2 cup olive oil
  • 1/4 cup diced yellow onion
  • 2 tablespoons Dijon mustard
  • 2 tablespoons poppy seeds

Instructions

  1. Add all of the ingredients to a blender and blend until smooth.
  2. Store in an airtight container for up to 5 days.
