Boring Vegetable No More: Tahini Spiced Cauliflower

Cauliflower has quickly become one of my favorite vegetables.  It is not only nutritious, but it is also very versatile.  You can make cauliflower rice, a pizza crust, eat it raw in a salad, or (my favorite) eat it roasted to perfection.  Roasting cauliflower in coconut oil with a little salt and pepper is often enough to bring out delicious flavor.  But coating this amazing vegetable in tahini, full of superfood spices, takes it to a whole new level.  The tahini acts as a glue sealing all of the spices in to the cauliflower.  It’s so delicious I can eat a whole batch.  Not a bad way to eat (and enjoy) your veggies!

Cauliflower is a great low-carb vegetable, but in my opinion, it hardly tastes like it.  The traditional diet many Americans are eating today usually contains too many carbohydrates and not in the best forms.  Highly processed and refined foods are not providing us with the proper nutrition we need.

My Tahini Spiced Cauliflower recipe is a great way to have some fun with what many people may consider a boring and flavorless vegetable.  You have the chance to use some seasonings that you may not have cooked with before.  A friend of mine often asks me to suggest spices to add more flavor to dishes.  Because as we all know the more flavor the dish has, the more we enjoy.  Well, this is it! Flavor at its best.  I remember a time when the only way I would enjoy (or tolerate) a vegetable like cauliflower was if it was slathered in fake liquid cheese sauce.  Well I’m here to tell you that this is better than that.

The spices I used in this Tahini Spiced Cauliflower recipe are well known for their anti-inflammatory properties, and I use them a lot if you haven’t already noticed!  This spice mix may look familiar from my Tandoori Spiced Chickpeas or my Mung Bean Stew with Turmeric Broth.  Coriander, cumin, and ginger have been used for thousands of years to support good digestion.  Yet another reason to love these spices and use them as often as possible!  Good digestion is one key to optimal health.  So eat up!

Tahini Spiced Cauliflower

Cook Time 30 minutes

Servings 6

Ingredients

  • 1 head cauliflower stems removed and cut into florets
  • 1 large yellow onion peeled, cut in half, and sliced
  • 3 Tablespoons coconut oil
  • 3 Tablespoons tahini
  • 1 Tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 inch fresh ginger finely grated
  • 1 large garlic clove peeled and minced
  • Parsley to garnish optional

Instructions

  1. Preheat oven to 425 degrees.
  2. On a large lined baking sheet toss the cauliflower florets and sliced onion with coconut oil.
  3. Roast in the oven for 15 minutes and then toss. Roast another 10-15 minutes until cauliflower is tender and the onions are caramelized.
  4. Meanwhile mix the tahini with the spices and olive oil to create a paste.
  5. Toss the spice mixture with the cooked vegetables to coat and warm the spices.
  6. Serve warm or at room temperature.
  7. Store leftovers in an airtight container for up to one week.
